From Thompson & Morgan Spring Trials, 2016 @ Speedling: The 'Rainbow Beet' Beetroot, a stunning five-variety beetroot mixture, Each variety has a deliciously sweet flavour. Wash young roots, peel and slice into salads to add color. The stems and leaves make excellent salad ingredients. Baby roots are ideal for pickling, whilst mature roots can be steamed. Stems can be steamed and used as alternative to spinach or chard.
